This year it was just the wife and myself.
So for Thanksgiving this year we did a smoked bacon wrapped turkey breast, green bean casserole, stuffing and, from Costco, scallop potatoes. My wife usually will do mash potatoes from scratch, but she wanted to try the the other.
We ended up doing a turkey pot pie with the leftovers.
Start with a 9.5" glass pie plate ( not greased). Dice up the turkey breast into 1/2" cubes.
Mix together turkey breast, frozen mix veggies, green been casarol, stuffing, scallop potatoes and 1 can cream of chicken soup. We have also used cream of mushroom soup in the past.

Place pie crust in plate and fill with mix.

Put top crust on and cover ends with foil.

Bake at 425 deg. This one took 1hr and 15 min. Take foil off 5 min before taking out of oven.

Good stuff.
