What do you guys normally use for enchilada filling? Last night we made some chicken and green chili stuffed enchiladas. I'm interested in what other options would be good.
 
yard bird and sundry of other goodies, onion, jalapeno, or green chile, and stuff, what ever is left in reefer

Well shit, changing the thread title now.
 
My recipe is:

1. Get dressed
2. Get in car
3. Drive to Mexican restaurant
4. Order Enchiladas (beef for me)
5. Cover liberally with salsa
6. Eat and enjoy
 
lol, about 1974 when i brought my wife to Az,( oh yeah might be off on what year, as its been a lifetime to remember) she attempted to make some mexican food, it was to say the least horrible, and i told her she couldn;'t attempt that till she learned to make tortillas, tamales, and salsa worth a crap. And why would she try as we live in one of finest mexican culinary locations in the states, now she does just fine, makes some of the best tamales i've ever had, and her chicken enchiladas, are killer, along with her salsa, which she hands out to everyone,
no end to the enchilada recipes, i'm a fan of sea food, so you know, its killer.

some good info here for sure.
