Well got a half a beef in the freezer along with elk and pig and deer. Never thought I would hear my kids say “Dad can we eat something other than steak”. I know...first world problems right. So I fired up the Camp Chef pellet grill this morning and threw some beef short ribs on. Pretty happy with the results if I don’t say so myself. What are you all cooking up today?

 
Breakfast this morning was Williams-Sonoma frozen croissants. You can't get a decent croissant in the US. European croissants are shattery crisp on the outside and tender on the inside. American croissants are mushy like Wonder Bread all the way through. They arrive via UPS packed in dry ice in a Styrofoam box (which can be re-used to transport ice cream etc. home from the grocery store). Put out a couple of frozen croissants overnight to thaw and rise, pop them into the oven for 20 minutes in the morning, and instant decadence.

Last night, made salmon baked in puff pastry with onions and mushrooms, béchamel sauce with tarragon and a splash of white wine, and brussels sprouts.

Speaking of first world, damn life is good.
 
I love me some salmon. Don’t get to smoke it nearly as much as I would like to. My boy keeps asking for some too. Maybe after all this stuff settles down I’ll have to grab some and smoke it up.
 
got a briskett in the green egg, oughta be done around 6 or so, hehehe, mean time had a salmon slab oughta be done in an hour hehe, need me some snacking before the feast

I have a brisket from our beef in the freezer. Going to have to give it a go sometime. My old man makes amazing brisket. Never done one myself so I am a little intimidated. But as they say practice makes perfect so I’ll have to give it a go and see how it turns out.
 
Are you sure you have enough protein on that smoker? I mean, I don't want your family to have a protein deficiency.

Haven't fired up the smoker in probably a month. With the kids gone, not worth it to smoke dinner for two. Only when we have company.

I have a carbine class coming up at Gunsite in a couple of weeks. I am going to make a bacon explosion for the gang. I will post pics.

Four large chicken breast marinated in Italian Dressing for 24 hours put on the Grill and Red potatoes sliced thin , red onions, bell peppers (green,red,yellow), pepper & salt deep fried in butter in a pan also on the grill. Good eat'n tonight and try to forget about the crap in the world. Plan to do a few Killians Red while out at the Grill to help with the forgett'n part.

God I hate this crap. It seems everyone is walking on egg shells or something. Everyone keyed up.

had a fabulour sardine sandwich yesterday, wanted kippered snack, but guess i ate the last one, dang i. need a fix for sea food, lol, hence the salmon smoked today, might have a tad left for eggs and salmon in the am.

Now that I'm working from home, I've been able to use my smoker twice or more a week now. So I've been cooking the finest cheap meat that Fry's has to offer each week.
 
Tamales! Just kidding. I have tamale lady for that. Hands down best I've ever had. Just picked up dozen and half freshly made.
