Other than Wilson Combat, who are some 1911 manufacturers that don't use any MIM parts?

Pretty certain you have to get into the 4-figure club:

Les Baer, Ed Brown, NightHawk Custom, Staccato(STi), Christensen Arms, Dan Wesson, etc

How is Christensen Arms quality, fit/finish, etc?

Just replace hammer trigger and safety parts with Wilson as suggested.

Oh, dont file on MIM parts. While the surface is hard, if you get too deep you will have problems. Just replace with non MIM parts. Much more cost effective.
